Lemon Icebox Cake -- Sweet Melissa Sundays
This week for Sweet Melissa Sundays, Jennifer of Keep Passing the Open Windows picked Lemon Ice Box Cake with Fresh Strawberry Sauce for us to try. I have to admit this had me fooled until I read through the recipe. Up until then I thought an ice box cake was a loaf shaped cake, layered with whipped cream frosting, and kept in the freezer or fridge until serving. This was more of a crushed cookie crust, cooked custard with stiff egg whites mixed in, topped with meringue, and then frozen. Something completely new to me, which is always fun!

Ohhhh! That looks delicious! You'll have to update the post with a picture (please). I would love to see what it looks like when it's cut. I'm sure it will taste devine. I'm craving it right now. :-)
Be sure to add the strawberry sauce, it is the perfect compliment. Yours looks delicious.
